Susan’s Super Avocado and Tomato Salad

This Avocado and Tomato Salad is one of my favorite quick salads, especially during the summer when you get beautifully ripe tomatoes and fresh avocado. If you like avocados and tomatoes, you should really try them together. You’ll absolutely love this simple-to-make starter.

Instructions
  1. Slice through skin on each avocado until you can twist the two halves apart.
  2. Remove the avocado pit.
  3. Scoop out the avocado flesh and chop, or slice the avocado flesh in the skin and scoop out already cut flesh.
  4. Cut grape tomatoes in half.
  5. Mix tomatoes and sliced avocados in a large bowl.
  6. Season to taste with salt and pepper.
  7. Serve and enjoy!
Recipe Notes

You can use pretty much any type of tomatoes you prefer, but the smaller ones don’t fall apart as easily in the loose salad mixture. I personally prefer to halve the tomatoes to make them easier to eat. But you can add them whole if you want to and don’t mind them squirting around!

One alternative I have experimented with a few times is adding other seasonings to the recipe. But when all is said and done, it just never seems to need anything else to make the salad shine. If you have favorite spices or herbs you like to use in fresh salads, you can certainly try them here.

Since avocado and tomatoes are also the base for a good guacamole, you could certainly experiment here with the salad as a starter and then move it on to a Mexican style salad or use it as a dip instead.
