As with any product, no matter how wonderful, there are pros and cons to each, whether it is because of features or context, such as being a match to a particular user. Here are some of my observations.
Pros:
- Straight-edge blades like this Wusthof starter set are the most versatile of all knives, and the sizes for these knives are also the most flexible compared to other lengths. The straight edge allows the knife to slice cleanly without tearing fibers when cutting so you get an even slice or cut.
- Wusthof Classic knives are constructed to the highest standards. Forged blades, with full tang and composition handles, and sharpened with their special PEtec process, these can be knives to last the lifetime of a cook, and even beyond.
- These well-balanced knives do not dull easily like less expensive knives do and are comfortable for extended use in your kitchen.
Cons:
- Wusthof knives, like almost every quality knife out there, tend to exacting standards. So, unfortunately, they’ll tend towards certain size handles when they design for ergonomic use. This can cause some issues for people with really small hands. Not impossible to compensate for, but one small-handed person suggested that it might take some experimenting to find the most comfortable grip and technique. However, this person also intended to keep their knives, so that says a lot.
- The Classic line of knives isn’t cheap in price. Or cheap in quality. But not everyone can afford almost $200 to buy three knives, no matter how versatile and high-quality. So if you’re on a tight budget or buying a gift where your price limit is lower, this set won’t suit you. However, you might consider doing as I mention farther down, and consider buying the one that fits your preferences and needs first and most.
- These knives are not pretty. If you want color, classy shiny handles, and sleek fancy knives, these workhorse knives won’t please you. The handle material and rivets — as important as they are to durability — won’t appeal to people looking for fashionable kitchen knives.
Versatility of Use
The cook’s knife in this set is suited to chopping, dicing, slicing, and carving, and great for meat and both hard and soft vegetables. The paring knife’s small size and sharp point makes it excellent for hand-held or intricate cutting chores like mincing or peeling. And the flared tip, tapered blade and medium-sized blade of the utility knife are useful for slicing sandwiches, meat, and fruit.
The 8-inch size for the chef knife is the most versatile size, as a longer knife can get in your way while cutting, and a shorter 5-inch or 6-inch knife sometimes isn’t up to the task of cutting larger items.
While paring knives come in quite a few sizes, the 3-1/2-inch blade is the most commonly sought after, as it can be turned to most tasks pretty well. And the same applies to the 6-inch utility knife, or sandwich knife.
Quality and Manufacturing
No review of Wusthof knives can be complete without some discussion of the manufacturing process involved in making these some of the top rated kitchen knives in the world.
These knives are constructed in a forged method, using sustainable manufacturing processes. This involves creating a hand-forged knife from a high-carbon steel alloy consisting of 0.5% carbon, 15% chromium, and smaller amounts of molybdenum and vanadium, which many professionals acknowledge as one of the best knife steels available. Then they measure the knife by laser before sharpening, and finally hand-hone the knife to a precision edge.
